A biodynamic grower champagne made with a blend of 80% Pinot Noir and 20% Chardonnay from the chalky soils of Guy-sur-Seine.  Hand harvested, native yeast fermented in oak and stainless steel, rested on its lees for 3 years before disgorgement, no sulphur additions.  Yellow plums, spice, chalky minerality, saline, dry and savory.
