Ribolla Gialla from marl and sandstone blend soils of Venezia Giulia, Northern Italy. 40% of the grapes in this wine have botrytis, a "noble rot" that concentrates the sugars in the grapes and adds a rich depth of flavor to the wine. They macerate for 10 days on the skins, with 4 punchdowns daily. After spontaneous fermentation with no temperature control, the wine ages for 1 year in massive old oak barrels. Notes of ripe peach, sea spray, lemon, & pineapple.
