Organically grown grapes from the Valle del Salnés zone of Rías Baixas, Galicia. 12 hour skin maceration and fermentation on indigenous yeasts in stainless steel tanks. Aged 5 months on the fine lees and bottled with no fining or filtration, and without sulfur. Nose of ripe fruit, toasty notes of pastry and yeast lead into a wine with fresh forest & citrus notes.
