This beer is our homage to, but not clone of, Saison DuPont. It's the only beer for which we buy yeast (We use Bootleg Biology's Saison Parfait). It's moderately hoppy for a saison, and is our desert island beer, fermented in oak barrels & bottle conditioned with honey. 6.5% abv.

A farmhouse-style witbier. Notes of orange zest, coriander, farmhouse funk, and tropical fruit, with a low acidity

Production Notes: This beer is brewed using a traditional Witbier malt bill, and is fermented in oak barrels with our farmhouse yeast blend and the addition of fresh local orange zest and coriander. While we don't pitch our house mixed cultures into this beer, it gets a mild tartness from the barrel fermentation and from ambient yeasts in our brewery. 4.9% abv.

Grande Réserve was first launched in 1948 as a Christmas ale under the name “Blue Cap.” It’s success and reputation as a strong ale of the highest quality led to it’s year-round production as Chimay Grande Réserve. Today it is the standard bearer of the Chimay range and has become notorious for its amazing cellaring ability. The beer is remarkably dry for the style and the hint of sweetness is derived purely from the highest quality of malts. Flavors of dates, fig and pear are complimented by aromas of dark bread, with a touch of rose. 9.0% abv.
