Iceland > Reykjavik. London Dry gin from Wanderlust Spirits, named for the Norse tree of life. Six botanicals: Balkan juniper, Chinese cassia, Spanish citrus, Eastern European coriander, French angelica, Mediterranean licorice — proofed with Icelandic glacial water. Piney, bright, pepper-spiced finish. 45% ABV.

A blend of apple varieties– primarly Astarbe (the same name as the 15th-generation family running the estate) and Mendiola (the same name as their farmhouse) are selected and put through the grinder or ‘matxaka’. After grinding and pressing the fruit, the must sits in stainless steel tanks for 24 hours. Under strict temperature controls, the must is then transferred into wooden casks or ‘kupelas’, where alcoholic fermentation — and subsequently malolactic fermentation — take place. The cider rests and ages in casks on lees for two months before it is ready to be drunk, straight from the barrel in the traditional ‘txotx’ ritual. The cider is bottled, unfiltered, in June. 6.5% abv.

Classic Sancerre from the legendary hillside vineyards of Les Monts Damnes. Grapefruit, lychee, lime, star jasmine, rose, with a limestone-influenced minerality.

80% Marsanne, 20% Roussanne from the Northern Rhone Valley. Fermented and aged in a combination of tank and foudre before bottling. Mid-weight, mineral driven, hints of stone fruit.

100% Chenin Blanc fermented & aged in barrel. White flowers/yellow fruits evolving towards complex notes of acacia and candied fruits.
