Mash bill of 60% rye, 20% malted barley, and 20% corn. Aged a minimum of 2 years.

All non-GMO and locally sourced grains; proofed with ground-fed, limestone-filtered spring water.

Bright aromas of pear, clove, walnut, and honeycomb precede a palate of baked apple, black pepper, and toffee.

Aged more than 3 years, the 2023 vintage of our Flagship Bourbon showcases a warm nose of butterscotch, dried apricot, and graham cracker.

These transition to a palate of coffee, roasted peanuts, candied cinnamon, and crème brûlée.

100% Chenin Blanc from the Pinon's oldest plot planted in 1945, and vinified in their oldest barrels. Fermentation lasts 2 to 3 months with indigenous yeasts, and it is aged in barrels 4-5 months. Baked apple, honey, & flowers lead to smoky/mineral notes with a touch of nutty bitterness on the finish.

Summer Sunlight evokes tropical vibes of mango, guava and papaya skins paired with ruby red grapefruit, Meyer lemon and dank resin. The merging of bright and vibrant aromas and flavors works in harmony with a lightly bready malt backbone. Bask in the light of hoppy happiness with each sip! 7.0% abv.
