Bacanora Yoowe

Mexico > Sonora. Bacanora — the spirit of Sonora, made from wild-harvested Pacifica agave (Agave angustifolia). Yoowe is cooked in earthen pits, tahona-crushed, and fermented with wild yeast. Smoky, mineral, bright citrus, roasted pineapple. A cousin to mezcal with its own Sonoran accent.
