Carricat is an exciting white wine from Sicily, made from a blend of Carricante and Catarratto, two indigenous grape varieties that thrive in the region. This wine reflects Viola's natural winemaking philosophy, with grapes farmed organically and vinified with minimal intervention. Carricat undergoes a short skin contact maceration (about 48 hours), which adds a subtle texture without overpowering the wine's bright and refreshing character.

Gravner Ribolla Gialla 2016

Exclusively composed of the Ribolla Gialla grape; indigineous to Friuli on the Slovenian border of Italy. Fermented in Georgian amphorae buried underground, long maceration with wild yeasts and no temperature control. After fermentation, the wine rests again in amphorae for five more months and then is aged in large oak barrels for an additional six years, bottled without fining or filtering. This is the 2015 vintage, a serious benchmark wine of the region. Robust, tannic, dense rich yellow orchard fruits, dried apricot, walnut oil, full bodied, decant and serve at room temperature. Zero sulfur.

Quintarelli Primofiore Rosso Veneto

Blend of 50% Corvina and Corvinone and 50% Cabernet Sauvignon and Cabernet Franc. The Cabernet is partially dried & left in wooden boxes to continue ripening, while all other grapes are freshly pressed. After pressing and fermentation, the wine is blended and aged for several years in Slavonian oak barrels.
