Made using the ‘méthode ancestrale’. The wine is fermented in the bottle and the fine lees stay in contact with the wine with no filtration afterwards.

Exclusively composed of the Ribolla Gialla grape; indigineous to Friuli on the Slovenian border of Italy. Fermented in Georgian amphorae buried underground, long maceration with wild yeasts and no temperature control. After fermentation, the wine rests again in amphorae for five more months and then is aged in large oak barrels for an additional six years, bottled without fining or filtering. This is the 2015 vintage, a serious benchmark wine of the region. Robust, tannic, dense rich yellow orchard fruits, dried apricot, walnut oil, full bodied, decant and serve at room temperature. Zero sulfur.
